Could someone post a schematic depicting how to generate a variable output of 4-20ma for simulation of an analog input?

I might misunderstand you, but cannot you just use a current source from your simulator library? Current sinus source?

Spice:
* Current source: Iname N1 N2 Type Value
* vccs (voltage controlled current source): Gname N1 N2 C1 C2 gainvalue

Spectre:
* pick from a variety of components in analogLib
