you can use the pwm to vary the intensity of the output.
use MOC series couplers to trigger a triac to vary the intensity of the ac lamb
you will find many sample circuits just by trying google

i need to connect 8 analog inputs to a single ADC. the input voltage ranges from 0-2.5V or 0-5V
can any one suggest an analog multiplexer for this application?
1x4 or 1x8 or 1x16 will do

simulation is good for testing
there are many things that need in actual hardware. if u connect a 12v supply in simulation at the supply points, nothing will happen. but in real hardware,the controller will go bad. are you sure that your lcd's are fine?

there are many standards in IR remote. if you are going to use a readymade remote, you need to check which standard is been used by that remote and write receiver code according to. if you want to design a transmitter too, you can use your own standard :)

try to increase the delays after sending commands and data . also you need to use some resistor (fixed or variable ) at pin number 3 of the lcd as the proteus will show u the value but in real life u need to adjust the contrast.

just download the datasheet and you will understand
the lcd have an inbuilt processor which controls the display here you communicate with this inbuilt processor
in led's you are directly on/off the led's with used defined hardware

first of all you have to configure the port pins as input and output accordingly
you must use a while loop to work the system if you want to run it for ever.
this is what i feel went wrong in the code
