1. SDCC is very good compiler for money you pay for it
2. Keil and IAR are better but they cost a lot.
3.Atmel has the new range of 8051 ,very fast one clock instruction
execution ,also new programming interface so you dont
need complicated programmer...

You can use 89c51AC2 or 89C51AC3
They are with buit in 10 bit ADC converter
OR
Use LM75 with digital bus (noise imune ), then you can use any 8051 chip.
Very nice software for 8051 and AVR family is BASCOM 8051 and Bascom AVR

Its same for Sony RC5 ,Philips RC5 or XX RC5.
Easy way to use RC5 and 8051 is to use Bascom 8051 compiler.
