voice processing with which microprocessor

Which microprocessor is the more compatible with voice processing, recording and play voice,
changing audio etc.
I have read about dsPICs and Analog Devices DSP's, however i can not decide where i have to start?
And which method must I prefer to study, are development kits are necessary?
If you can inform me, about this issue,thank you..

Freescale Symphony Soundbite is very well suited for audio applications. Though I do wish it had more memory, but it will work for most applications. Not my favorite dev tools though (which is unfortunate, considering they are eclipse based which is usually awesome).
 

ARM based processors are hot now, any mobile gadget you see one of these processor. so go for it. There are few open source tool for educational purposes but may not suite much for commercial use.
