Is it very important that the capacitors around the max232 chip is at 1uF 16v?
I have some at 10uF 16v & 1uF 50v. Which of one would be the best to use?

Both will work. Asking yourself which ones are smaller, and which ones cost less , may help you decide.

The data sheet recommends 1uf. I use 1uf, for all my designs for faster charge time. Which allows higher BAUD rates. But yes … you can use 10uf, if you desire.
