How does one know which stepper motor to use when designing a robotic arm

Stepper motors can have various torque and step sizes among other things. How does a person decide what type of stepper motor is most suitable for a given application e.g a small robotic arm? By small I mean that it can fit on a bench, more like a final year university project.
