How to protect inputs and outputs processor to which they are attached HALL, IR and other digital sensors?

Example. HALL A3144 on 2m cable, powered +5V.
My first choice is 1k resistor, but does not solve ESD protection,
Second choice is use integrated circuits as https://www.vishay.com/docs/81385/vemi45aa.pdf , bud this package is too small for manual placement.
How do you solve a problem you?

Use a similar protection like the CMOS input protection:

Use "vanilla" (any) diodes; D1 & D2 to your external device's power supply, D3 & D4 to the processor's power supply. R=1kΩ should be ok.
