I'm looking examples of sending AT-comands to cell phones using microcontroller. In a what way can I add a new items to phone's menu?

How about AT comands? Is it really to add new menu items using only commands?
I've heard that it is possible for sony ericcson cell phones, but I haven'n an useful information about it. What do you mean about is?

No at command can be used for all mobile phones. Basically, at command for all mobile phones are general, but some mobile phones have their own at command.
What is your mobile phone?
For example, if your mobile phone is Siemens S45, just googling "Siemens S45 at command"
