Try to implement some algorithms which you have studied using Verilog.

Try to Design an small Op-Amp.

If you want to do by using FPGA, check Xilinx site. There you will get lots of Applicaiton notes.
 

why don't you try to make a UART out of that FPGA, and then use it to show the results in a LCD panel, much like a calculator
