i'm planing to use FPGA to process the data from the accel. ic.

You haven't specify what acceleration range are you trying to measure.

SPI stands for Serial Peripheral Interface ( https://www.epanorama.net/links/serialbus.html ), but I am not convinced you should use this feature in your project.
Fast A/D conversion from analog accelerometer is probably safer option.

To measure car performance you will need an accelerometer of ≤ 10g.
Just imagine this situation: car accelerates from 0 to 100k/s in less than 5s; that gives you acceleration of 20m/s² ---> ≈2g.
