That is a method in spectre. If you want to change x-axis in csope, as I know, there is no good method. I always do like that:
1 plot two waves in same graph, one is A, the other is B
2 if you want to change x-axis to A
3 right click on name of A(on the right side of graph)...

did you add a cap at the output of amp when cut off? This cap is the total capacitance at the gate of M18. And I think it is better to put main polt at the output of amp, this will improve psrr. From your circuit, main pole is at output of first stage amp.

When I get a extracted view by assura 3.16 version, I find the finger number is not extracted, finger is alwayse 1. But for spice and spectre extraction, the finger number is correct. Is this a bug of 3.16 version?
bubble correction
It is true that if a bubble occurs near the top thermometer code, gray output remains fairly close to the top of thermometer code. But if a bubble occurs far from the top, ex at the eight's bit, the gray code will be 0011, quite away from 1011. So how does gray correct such...
Input noise is useless, because it is get from output noise devided by transfer gain from power to output. From your simulation, the gain (of psrr) is 60u200m=1/3000 or -70dB. For bandgap, we only need to care output noise.
I don't know how do you break the loop at the opamp output. I uaually break like this. C2 and R2 are large enough, e.g 1Mf and 1Mohm. C1 is the gate capacitance of pmos current mirrors.
