Zetex is renowned for transistors like this. You will often find that they also have rather higher Hfe at high Ic than many other small transistors. If you can find one to suit your application they can be an absolute saviour.

Best way is to get a pair of quadrature signals and then solve for:
X = I*(dQ/dt) - Q*(dI/dt)
This is the same as the more fundamental arctan(I/Q) differentiated. Either use some math to solve the equation, or use an arctan lookup table.

Yes, it is far more typical to see 10R or even 4R7 in the gate. Typically I use 1206 size resistors for that purpose, but 0805 can be OK if you get metal film ones.

It is actually more common to use RED leds for that sort of use rather than infra-red. Often the led is driven with a modulating AC source and then this is demodulated on the receiving side to remove ambient lighting artifact.

It depends entirely on what you are using the tube for.
The transit time is going to define an upper limit which is well beyond the practical capability of most tubes. Transient response or rise time is generally going to give a far more realistic view of the performance.

Maybe rather than just studying you should get some real learning? Get an FPGA development board, download the appropriate tool-chain and try writing a test-bench! Then you WILL know how to do it.
