Hello,
try to put some delay between the instructions ADC1_Read(x). Maybe there is not enough time to read the adc and that is the reason you are not reading all values.
The error you have is because the IC hasn´t a Pspice model, you can find it in capture but it´s only the draw. The Pspice model you can found it using Google or in OrCAD website (I´m not sure if it´s on website).
This has happened to me many times in some IC´s.
