whats diffrence between channel 1 vs channel 5?

The channel identifies the instrument, as far as I recall. It is used so you can have multiple instruments (daisy chained, I think) on the same MIDI cable. So, you can either direct commands to the correct instrument or identify which instrument notes have come from.
