i need to attach wire to the sensors so that it can be put at a certain distance from the microcontroller. (around 1m or less)

what type of wire is suitable?
is normal jumper wire suitable?

how does the type of wire affect the reading obtained?

Without knowing the type of sensor, the circuit and the characteristic of AD converter is impossible answer.
In general if the sensor need two or three wires you can use shielded coaxial cable.
If you use two normal wires and take them apart you have a loop that can pick up magnetic field and generate noise.

The is a Dallas Semiconductor 1-wire temperature sensor. For the 1 meter distance, just about any type of wire is suitable. The following web site lists 30 meters over standard modular phone cable. It also links to a detailed document from Dallas Semiconductor on this subject.
