IMHO .. MPLAB C30 is the one you should give it a try... since it's made by the manufacturer of dspic..and the student edition is free..

The MPLAB C30 C Compiler Student Edition is free! It is full-featured for the first 60 days. After 60 days only optimization level 1 can be enabled in the compiler. The compiler will continue to function after 60 days, but code size may increase. There are no restrictions on the use of this C compiler (see license text for details)."
Use MPLAB C30 or the Hi-tech for simple to intermediate applications, if you are going to develope a real complicated fancy project then go up to the matlab 2007b coder.
In my idea, you choose the sofware for dspic not important. Each sofware has a individual advanture. You should surf Microchip.com and download application note. It help you learn dspic quicly. Have good job!
