Understanding Ethernet

Hey

I am trying to switch the power to an IP camera which is connected via ethernet using cat 5 e cable. It uses POE also. I basically want to make a box which you can plug a cable into for input and take one out as output.

I am going to buy ethernet sockets but I am unsure if these will work...

If i use this and take the pins relating to plus voltage can I switch this then send the signal back out. in other words the box will change the plus voltage line to 0v until a button is pushed then it will send out the usual voltage to power the camera.
