Can anyone please explain what is maximum reverse standoff voltage?
Is it the voltage upto which the TVS will be invisible to circuit?
Can you please provide any good application note for using TVS diodes.

Yes, thats correct. Max reverse stand off voltage will specify the operating voltage of your application circuit. If the signal/ power line where the TVS is present is going to go beyond this spec, then the TVS will breakdown and start conducting.

In general it is either back to back zener or single zener like avalanche diode.
But some also prefer Triac like performance

e.g.
