Temperature measurement and 4052 analog MUX

analog mux 4052

Does anyone know how temperature signal coming from a thermocuple or RTD is converted to digital in commercial temperature controllers?
I opened several commercial temperature controllers to find no ADC nor a uC with ADC but only an anlog MUX (4051 and 4052) and one or two op-amps. The precision of the temperature measured is usually 0.1 degree C.
