I'm still not perfectly clear what you're trying to do. Here's one possible circuit, drawn in your style, and this is what it does:
- When the relay is OFF, the dimmer will control the load.
- When the relay is ON, it bypasses the dimmer and the load will receive full power. That is, the dimmer will have no effect.
Is this what you want?

I made a mistake in naming the load terminals. Phase and neutral should be reversed in the drawing - just the names, not the connections.
