I have installed 200 kVAr Capacitors / 440 V to Improve Power Factor.
However, because of Harmonics issues, I will be de-tuning my Capacitors using suitable series Reactors preferably 7%.

Because of this, I will have to replace my 440V Capacitors with 480V/525V Capacitors.

What will be the kVAr adjustment required to still get 200 kVAr using 480V/525V Capacitors.
 

Reducing your capacitor sizing by 7% will get you very close to the original 200kVA (with chokes). Putting in the 7% chokes will, as you say, raise the volts on them due to the slight resonant action and therefore cause more current to flow in the caps which causes the net effective kVA (capacitive) to rise.
