Polling method in Bootloader

Hi,

I am working on UDS CAN Bootloader. I have question that, why the Bootloader works on Polling method not on Interrupt?

I am kindly requesting to clear my question.

If it has nothing to do except checking the flag, why it should use the interrupts?
