normalizing input signals

HI All
I am a real newbie to Signal Processing and filter implementations.
When input signals that must be normalized i.e. they should have zero mean, and unit variance what do I have to do?
If I have an algorithm to implement using input signals that are windowed i.e. I provide my algorithm consecutive groups of n samples of my input signals: how to perform this normalization?

Should I calculate the estimate of the mean over the sample of each window and
decrease each sample off this estimate?
And what about the unit variance?

Maybe it is a silly question but I don't know how to start.
A very good basic example might help
