I need to purchase a data logger. I have 4 thermocouple and 2 RTD input.
I am confused what should be the minimum sampling Rate require for this application. ( Or what should be the timimg interval)
You need to define the sampling rate you need for your particular application. For glaciers, I sample once per hour. For Ramp-and-hold oven temperature tracking, I may sample every second.

I think the good question you have to ask to yourself is:
What is the quickest event I want to be able to detect with my logging ?
Then choose a shorter sampling rate (2 times shorter is generally good).

You don't have too consider the response time of the probe but the response time of the all system.
Is the temperature you're going to log is susceptible of these variations ?
In brief if you intend to log a 1000 L water tank temperature you don't have to log every half second, as the temperature of the water will not vary that fast.
I don't know if you catch what I mean.
what i mean , let suppose My theromocouple response time is 1 Sec .
so thre is no meaning to select data logger sampling speed less than 1 sec because therocouple temerature reading will updated after 1 sec.
