Can we give 500V AC as input to this IC?

Did you read the ad736 datasheet?

Even at the "absolute maximum ratings" I see max input voltage = +/- Vs
Vs max is specified with +/- 16.5 V.

Simple answer: No.

The question itself, as elaborated, seems senseless, due it is always necessary reduction of the mains extent to a voltage range that fits the maximum value allowed by some device.
