microwave switch timer and thermostat

Hello everyone I'm new here just joined so hope I'm postin this in the right place... apologies if not, but I'm lookin for some wiring information on the timer in the pics below I want to reuse this on a fan and didn't no what terminals are which... there is also a power setting adjuster for the microwave built in... would I be able to use just the power controller wired to the fan for use a a fan controller? The terminals are marked 123 and M...
Can anyone help? Thanks in advance

Check switch action with multi-meter or just hook up with fan and see the result.
