Can LVDS be used for say traveling 1 foot across a cable to another PCB or should it only be used within a signal PCB or PCB stackup?

it is all depend on the frequency that you use....however i feel ..... 1 feet is very high distance and your parameter of transmission line may exceed the limits .... I had used LVDS to travel a signals of video processor on board from one chip to another distance was in the order of 3 inch with clock at 62.5 Mhz and 7 bit protocol per clock cycle....it work well but I think better to study the spec more clearly....

I think you need to refer this more carefully for your frequency ....

LVDS can perfectly work for off-board connections. Video interfaces like HDMI are essentially using the LVDS standard. Shielded twisted pair cables with 100 ohm differential impedance, e.g. CAT5 can be used. The gavanical signal coupling and limited receiver common mode range restricts the usage to a distance of a few meters.

You can very much use it for off the board:

We have a system where it travels upto 1.5metres with a normal ribbon cable and even upto 2.5 metres with twisted pair shielded cable.
