The Protocols (TCP/IP Illustrated Vol I) Richard W. Stevens, one of the classics.

If you are interested in Implementations(the way a TCP/IP stack is written) then
Implementation (TCP/IP Illustrated Vol II) Richard W. Stevens. Also check out source code's of FreeBSD and linux.
