some time ago when I was student I did a course in PLC and there were some practical exercises on Siemens PLCs and ladder. I think there are some good books explaining it, but the best way is to have one on your desk and to play with it ... might not be Siemens, I think most PLCs support ladder, so you can pick up other brand like Mitsubishi, Schneider, ...
