help: Automotive Detonation sensor amplification..

Need help designing a board to take one input and give 3 simple outputs.
The input is a piezoelectric crystal detonation sensor (bosch type), i believe these are fairly generic in nature?

outputs are simple also
*8 bar LED display
*0-5v signal level output for data loger
*audio output for headphones

The issues i dont understand fully are the two op-amps required for the signal amplification and an audio amplifier for the headphone output. if someone could help me select these two op-amps i'm sure i can work out the rest... exactly what type of op-amp (spec wise) am i looking for? Has anyone got some good www resources on op-amp selection?
