Hi

Is DC-DC converters mention as isolated uses Galvanic Isolation?

In the datasheets of isolated DC-DC converters mention isolation voltages.

How are they isolated? Galvanic?

"Galvanic isolation" is kind of a generic term. It could mean optical; it could mean through a transformer.
 

It could also mean through capacitors, depending on the power involved.

'Galvanic isolation' is when the input and the output is floating related to each other.

Please confirm that this one from murata NCS1S2403SC is galvanically isolated..

It's an industry standard isolated DC/DC converter. 1W SIL form factor.

All converters specified with an isolation voltage are "galvanically isolated", means have infinite resistance between primary and secondary.
