do ou need to implement on Chip device or your are going to use a microcontroller ?
for on chip devices , there is a good url that contains small projects on usb on VHDL :

This is a simple but very strong 'software bus analyzer' at windows.

This shows the all Endpoint packets.
I did study the usb protocal using this program.
