You can use a digital approach by means of Xicor's digital pots, X9311, X9312, etc. These are very cool devices that holds values in an eeprom inside it. And very easy to control it. You could make a mechanical or optic device that send pulses to Xicor's pot.
 

i use a mouse
and change the 5 byte pkts to serial data on a stack or two

for controll via an ad8403-100k four 100k log pots
serial controlled
and as the pic has eprom
then is ok


any way it has turned into a full 45 gb dual mp3 player with slide and auto speed adjust and

incorperates midi interface and serial upload
to disk

so its getting there
now on 4 ft / 6 ft breadboard
hehehe
i looked at those chips
but they dont have independant power rail auto control
and also no noise floor adjust on the fly

I have used these devices on a project of a serial controlled instrumentation amplifier and worked well.Very low noise and no need of separate power rails, as long as you keep the signals inside the GND and VCC span.
