Hey
I am looking for Biomedical project. I am interested in pressure measurement between tooth.
 

Use a load cell and decode the output with a Microcontroller to display in Kg/ Gms or what ever you expect to.

Compression force can be best measured with thin piezoelectric or piezoresistive elements. You should know about the acceptable sensor thickness first.
