Controlling an AC motor schematic

How can we control the direction and speed AC motor and which type of AC motor has to be bought to control in that way ?
 

Only direction of 3 phase ac motor can be changed.
Single phase AC motors are meant to rotate in one direction depending on winding.
Nowadays you get AC motor with dual windings a relay can be used to switch direction of rotation..

Speed of AC motor can be controlled by

1.Voltage
2.Current
3.Frequency
