I have a particular power supply ebay part#451331021396 bottom line is it has a trimmer for voltage adjustments and I am uncertain if it would also limit its output current below its maximum specified rating thus not blowing its fuse for any load. It would yield current limiting resistors unneeded.

Your load will dictate your current.
