I'm afraid your questuon is too general.You'd better refer to some books first.It's hard to tell you from scratch.
 

Try searching MATLAB's online help for the section named "Creating Graphical User Interfaces".
 

Type GUIDE in matlab command prompt, there will be a workspace you can design your GUI, similar like VB or VC++.
