Does dishwashers (dishes) use any kind of advanced power control like variable motor speed control etc..? or is it all just on/off inlet valve, rotation of shower, detergent release, heater, pump etc ?

Asfaik, washing machines (clothes) uses VFD like control with vibration feedback. The rest is plain on/off.

" with vibration feedback.", I think you mean speed feedback, they use a tacho for a low speed start for the spinning cycle, then to reverse the motor, in the spin cycle the motor eventually gets its full AC (230V), while in the washing mode , because the speed is so low its only gets 50 V.

Recent "high end" dishwashers (e.g. from Miele) have apparently VFD for circulating pump motor.
