AD590 temperature sensor in flatpack package - assembly

Hi everyone!
I'm using the AD590 temperature sensor by analog devices (data sheet: **broken link removed**). The aim is to sense the temperature of a copper plate.

Now I have one problem: The sensor (in flatpack package) has a ceramic side and gold plated side. Which one do I attach to the copper plate in order to get the best thermal connection?

I would be very thankful for suggestions.
 

Assume that the chip is mounted on the ceramic substrate with no direct contact to the metal cap.
