I'm curios about what are the best applications(biomedical, security, automotive etc.) of low frequency signals of S/H circuits? specific devices and purposes.

I'm talking about IC designed S/H circuits.

If I understand your question correctly, Sample and hold operation is very essential in converting continuous time signals to equivalent digital bits and are extensively used in nyquist rate analog-to-digital converters.
