suggest about OSs for ARM ?

HI all
I'd like to design and implement one DAQ system in using ARM cpu + LCD graphic.
My system is capable to display graphic user interface.
I hear that abou WinCE, Embedded Linux and also VxWork.
If anyone has developed something like that, please advice me what system (or tool) i need use.
