Which is the best for microcontroller like 89C51 or PIC. Which one will give good stability Crystal or Crystal Oscillator.

I think both are similar in stability.
but crystal is better, because it is cheaper and smaller than crystal oscillator.

They are different, my friend, one need capacitor to work, one get almost everything only need a voltage to work.

There are fewer part on the oscillator design.

It is hard to say which one is better. They could both good or bad depends on the hardware design.
Microchip posted couple of design guide on how to design oscillaor circuit, and things you must pay attention to when designing this type of circuit.

i believe that pic is better and more stable.

Not on the DIP package I used.
The TQFP packages and SOIC are way better than the DIPs.
