What is specified with "bit" in 8-bit, 16-bit, 32-bit MCUs?

What is specified by bit by calling 8-bit, 16-bit, 32-bit MCU's. Or pls give me the basic referances to have look.

When referring to a micro the number of bits specifies the length of the word the micro can process in a single operation. An 8-bit micro can only work on 8-bit quantities, for example.
Of course, multibyte operations are possible, but they take more than one operation.
