If you hunt around with eg Google, there are some real-simple, but fun discrete circuits. Failing that, can you hack a line-following mini-robot's code ??
Put a wall down the middle between the light-dependent resistors, so that it starts to cast a shadow on one of them as the sun moves across the sky. Then turn on the motor to move the unit until the wall no longer casts a shadow. Then the ldr's are equally illuminated, and you can stop the motor.
