Suitable TRIAC to replace contact in thermostat (24VAC) ?

Well, first of all, you have to know exactly what your load requirements are.

You already have the first requirement (24VAC) and as such, you can select a lower voltage rated Triac.
But what is the load current? I suspect it will be around 1 amp, but you may want to check it out.

Anyways, a safe bet would be a 200V, 4A Triac. They are ubiquitous and low cost.

A 600V 8A triac is certainly an overkill for one who needs to switch 24V at 1A.

But then you also consider:
1. It is easily available and the one want is not;

2. You may not need an heatsink even;

3. You can proudly boast about your conservative designs;

4. No doubt it will be an improvement over the original.
