A power generation plant powers a city or a town etc...

but without knowing precisely how many devices its going to power how does it generate the exact amount of electricity...
unlike a battery which stores charge and gives the required electricity, a power station has large AC generators which don't have the capacity to store electricity..

How does it work???

How is a generator given current and voltage rattings

An AC generator is normally gives out constant voltage...
but the current output is a variable depending on the load or transformer it is connected to...

How is the voltage rating for a generator given??? Is it based on the rotor speed of it???
and when the current drawn from it changes how does it do so.. by changing what??

By burning more fuel!
If you increase the fuel flow, that increases the temperature, which increases the pressure on the turbines, which increases the power to the alternators, which advances the speed of rotation AND the voltage. Both of these increases (speed and voltage) might appear to be small, but they increase the supply to the load as required. If the power plant does not respond to an increase in demand then there may be a measurable reduction n speed and voltage, both of which would lead to a reduction in the supply current.

Some generators have field coils which are also used to regulate the production of electrical power.

The power station operators, look at how much power they supplied last year, what the temperature was and is and what is on the TV. They then can make an educated estimate of what the power consumption will tonight.
