i think you can start with ADS1110. It has differential input ( very useful in your case), internal reference , 16bit resolution and internal gain amplifier of 1,2,4 and8X. interface is the usual i2C. The best part is it is very cheap . the only problem would be the small package making it difficult to solder for a prototype. equivalent microchip part is mcp3421.
package is SOT23-5.
looks perfect to me.
just take care about the reference voltage given to it due to the low amplitude and high resolution of the ADC ( provided you are using the whole 20 bit span).
