It basically depends on the application. S21 provides the description of the filter, while S11 (matching) in the stop is upon the application specifications.
Reciprocity theorem basically claims that two interacting fields have the effect on each other. Thus changing one field (e.g., the position of the transmitting antenna) will have the same effect on the system as changing the other interacting field (the receiving antenna) the same way.

If you mean to extract the Q from simulation, then just resonate the balun at the designated frequency, and from the transfer function Q=freq/BW (3dB).
