Nice to hear u, Yes Windows CE is one of the best OS with real time concepts, also many help features/support from microsoft is also availble on it very easily..... :)
Then u can use MIPS based processor. Since it has designed for the applications u specified here. Even ARM will be good. See Windows CE supports 4 types of processors i.e. ARM, x86, MIPS & SH4.
Can any one help me on how to port/implement a audio device driver of MDD/PDD model in to the Windows CE 5.0 OS image ? please reply me back if any one
