Question of phase plot
it depends which input you take as reference. As edge_tv said, when the phase starts at +180 is because you are using the inverting input as reference for the AC analysis.
ota cmfb design
I made a Verilog A model switch and replaced MOS switches with this model. Basically the ideal switches wor like a voltage controlled resistance, with very low resistance when activated (200 omhs), and a very high resistance when off (10Gomhs).

Re: GAL and FPGA
GALS are oudated but are still useful to make simple logic systems. FPGAs are a lot more complex, you can even run Microprocesors on them.

741 is a general usage AMP OP, nothing special about it, for specific applications reuiring low noise and low distortion, other kind of aplifiers are required.
